Almost every countertop ice maker sold makes one of two things: soft chewable nugget pellets, or hollow bullet cylinders. The machines are built differently, cost differently and suit different drinks.

Texture and drinking experience
Nugget ice is compressed flake ice. It is soft enough to chew, packs tightly into a glass and takes on the flavour of whatever it is sitting in — which is why iced coffee and soft drinks taste better with it.
Bullet ice is a hollow cylinder frozen onto a prong. It is hard, clinks pleasantly and is perfectly good in water, juice or a cooler. Nobody chews it twice.
Melt rate and dilution
Surface area decides this. Nugget ice has an enormous amount of it, so it chills a drink faster than anything else and then dilutes it faster too.
Bullet ice lasts longer in the glass, though it is still hollow and cannot match a dense clear cube for slow melting.
The machines are not comparable
Nugget machines need an auger and a compression stage, so they are larger, taller, more expensive and slower to produce a first batch.
Bullet machines are simple, light, cheap and quick. Many have a carry handle, which is why they dominate the portable end of the category.
Maintenance differences
Both formats need regular cleaning cycles, but nugget machines are more sensitive to scale because the ice path is narrower and mechanical.
In a hard-water home, a nugget machine is the one that will punish a skipped cleaning schedule first.
